Bansalan

On the slopes of Mount Apo in Barangay Balutakay, Ariel Morales' Catimor trees grow at close to 1,470 metres. He belongs to the Balutakay Coffee Farmers Association, whose lots have placed in regional cupping competitions. The altitude and cool nights slow the cherry's ripening before it goes into an extended anaerobic ferment.

A sweetness that carries through

The lot is fermented before drying, which carries its sweetness well into the finish. Caramel and toasted almond lead the cup, with milk chocolate underneath and a soft floral lift. An easy, dependable coffee for everyday brewing.
