Dried whole, out of the afternoon sun
The cherries are picked ripe and dried whole on raised beds, turned by hand and moved out of the afternoon sun to slow the process. Lourdes works the harvest with her children, passing on techniques handed down through generations. It is patient work that draws out the citrus and dark chocolate in the cup, roasted medium to keep the fruit and florals in balance.

Worth taking time over
It took a few brews to find the right grind, but once I did the cup opened up. Citrus and cocoa, very balanced.

Floral and clean
Jasmine on the nose and a long, sweet finish. Easy to dial in on my V60. Proof that Cordillera coffee sits alongside anything I have bought from abroad.

Our house coffee now
We go through a kilo a month between the two of us. It is consistent bag to bag, and the whole beans arrive well sealed and recently roasted.

Lovely black, hindi gaano with milk
Kapag black, bright at layered, with a clear orange note. Pero kapag may milk, nawawala ang citrus and it turns quite plain. So now I drink it black.

A good reason to slow down
I brew this on Sunday mornings when there is time to pay attention. Clean, sweet and gently floral. Knowing it comes from a named farmer in Sagada matters to me.

Bright without being sharp
Citrus first, then a dark chocolate middle that keeps it grounded. The floral note shows up as it cools. I have reordered it three times now.
